playing downloaded maps in instant action?
I know this question can apply to all UTs, but I am wondering how I can play for example the bunny track single player offline, in the practice mode in ut99 - 3, possibly the new UT 2014

In UT99 is this simple ...if you have the game mode installed choose it from the drop-down menu and afterwards choose the map from the map list ... provided that you installed the map into the map folder first.
But to be true ...I don't know if BT is offline playable. Some of the BT veterans can answer this.
The other UTs are a different matter and belong into the Off-Topic section.

Just find the mod and install it into your ut directory... This is only for UT99. I don't know about other games.
The most popular mapname we use for bt is CTF-BT* and this mod allow you to play the map with CTF-BT* offline:

You don't have to do anything as the readme said, as it is for setting up servers to run the mod. Add the files you need, and then go into practice mode and should be there in the dropdown list...
@PaperCoffee, yes you can play it offline. I've done it for awhile.

Use this checkpoint if you get tired of starting to run the whole map from the start.

This is useful if some maps have other weapons than Instagib in order for it to work (like CTF-BT-TechDiffv4)

Seem like we're only able to use BT-* for this. However, this is the most popular used bt mod with the mapvote ability to use CTF-BT* on servers.
