Sorry for the slideshow but I need to illustrate something.
I've put playerbots on some of my own maps, not ones I've made but ones I've got, for various reasons. Anyway, this guy on this map is one of the few of the boss model I have:
I almost missed it the first time it happened:
Playing with NW3's Ultra Gore. Normally humans die in Red blood clouds, some aliens in Green ones.
So why is he exploding in white & grey chunks?

Check your .ini
There are three colors available so far and they are defined in the .ini, you can change them by model, skin and other options there. The colors are red, green and grey; by default the robots have grey, like Male Soldier with War Machine skin.

Yep, is like UTDeath said.
The gore is configured by default to spawn grey stuff when the model matches Xan's. You can add another similar line to the list with the model and the skin texture name/wildcard you're using to be detected as normal blood.
This mod comes with a pdf, so you can find the "how to" there. If you any doubts from there, feel free to ask.

Major bump for a quick yet important request: remember the reported problem about the gibs generating big splashes in the lava in CTF-LavaGiant?
Could someone try to reproduce it again and tell me the exact steps (mods used + maybe a video on it or step by step description)? I tried it today and I couldn't manage to reproduce it at all.

King of Screenshots, I'll get on that tonight. Although, I've noted recently that map making big splashes even without NW3 running. In other news, I managed to make the carcass (the dead body of the player) to be affected by the gore system today. This basically means that in the next version of this mod the Flak primary fire for example will work properly with the gore (since in its case damage was caused by such small amounts that the player wouldn't gib by himself, but rather his "carcass" placeholder after his death would).
The "random" bugs were fixed as well, such as having gore/skeleton with still the complete player body intact, and head exploding without being a headshot.
I just need to fix a few more things and add some requested options, and a new (last) version should be released this week or so.

Despite what it says on this first one, these two are from massive gibs:
The effect barely lasts a full second, no matter how big it was. Your Ultra Gore makes really big bloody gibs, which causes the splash. Smaller gibs, not so much.
It doesn't seem to happen with just NW3 without Ultra Gore, though.
I tried Ultra Gore with NW3 and without it, just with normal weapons. It's your gore that kicks it off.

Yeah, I can't see the images properly. After a few wgets I could retrieve some of them (1 of them only partially), but there's something seriously wrong with your image host, it's too slow and is constantly refusing and closing connections.
But yeah, if the gibs are too big, they will cause that (the splash is dependent on the size of the gib, as expected). There would be a problem if that happened with just the regular small gibs.

Sometimes LJ's scrapbook has issues, but I can still see the images fine so the problem doesn't appear to be on my end or theirs.
